SUMMER SALAD

On hot summer days, a refreshing salad with juicy watermelon is most welcome. Ideally, you can buy ripe watermelon at your local farmers market. To make sure the watermelon is ripe, pick it up and weigh it in your hands - it should feel heavy for its size, the spot where it rested on the ground should have a creamy yellow color, and when you tap on it, the sound should be hollow rather than dull.

The feta cheese should be omitted when on the Specific Carbohydrate Diet since it is not SCD legal. Make sure you have been improving on the diet for at least six months and symptoms are mostly gone before reintroducing it.

 

SERVES 6
INGREDIENTS

for the salad:
1 small seedless watermelon
12 oz sheep feta cheese (This item is not SCD legal! Omit for vegan or lactose-free option.)
5 oz arugula or baby spinach
1 serrano chile

for the vinaigrette:
1 cup olive oil
2 tbsp fresh lime juice
2 tbsp champagne vinegar
2 tbsp fresh thyme chopped
1 shallot minced
salt and pepper to taste

INSTRUCTIONS
In a small bowl, combine all of the ingredients for the vinaigrette and mix well. Season with salt and pepper.

Slice watermelon about 1/2” thick then cut into 3” squares.

Stem and mince the serrano chili.

Slice feta cheese 1/8” thick.

Assemble the watermelon, feta cheese, and arugula into a shallow bowl and drizzle with vinaigrette. Garnish with serrano chili.
