LUSCIOUS RASPBERRY SAUCE

Berry picking was one of my grandparents’ favorite activities in the summertime. I still remember spending hours in the forest with bees humming and birds chirping and a light breeze moving fir tree branches. We simply filled our buckets, which were tied with string around our waists. It was such a peaceful and relaxing activity, and I don’t recall ever being bored while picking berries. During berry picking, the mind had endless time for imagination and I invented a whole fairy world with the moss, twigs, roots, and little ferns of my surroundings. As an adult, I tried to give my children a connection to nature as much as possible. We picked a house in Pennsylvania because of its large backyard, we hike and bike in the surrounding national parks, and I take them back to the Black Forest in Germany every summer not only to see family, but also to explore the mountains, valleys, streams, and lakes this beautiful area has to offer.

A bucket of handpicked wild berries is like a pot of gold. The fully ripe berries taste like sunshine and so much better than anything you could ever buy. If you get a chance, take your kids and go pick your own berries instead of grabbing them from the freezer. You will give them so much more than food: it is truly an adventure, hiking out there to find the best spots, trying to reach the best and ripest berries while learning about nature and exploring your surroundings.

Of course, this raspberry sauce also tastes great if you use frozen berries and it still counts as homemade. You can simply add it to your favorite crêpes, pancakes, dessert, cake, or ice cream and enjoy!

 

INGREDIENTS
10 oz fresh or frozen raspberries
3 tbsp honey (optional)

INSTRUCTIONS|
Add all raspberries, honey, and two tablespoons water to a small saucepan. Bring to a boil stirring occasionally until the texture is smooth, like fruit spread.

Serve it with your favorite dessert, cake, ice cream, pancakes, or waffles.
