CRUNCHY HONEY PEANUT BARS

I found some peanut bars while visiting family in Germany that contained only two ingredients: honey and peanuts. They tasted great and we took them along on our frequent trips and hikes. Unfortunately, I couldn’t find anything like them when we returned home, so I had to figure out how to make my own homemade peanut bars. This recipe is so simple, it takes less than 30 minutes to make. The result: slightly sweet and perfectly crunchy peanut bars! Wrap them in parchment paper or aluminum foil and they can be brought along on travels or added to school lunches. You may find yourself secretly munching on them at home too…

 

INGREDIENTS
16 oz roasted peanuts
1/3 cup honey

Tools: 7”x11” baking dish

INSTRUCTIONS
In a medium saucepan, bring the honey to a boil. Reduce the heat and let boil for 2 minutes until the honey turns an amber color. Turn off the heat and add the peanuts to the saucepan. Combine well.

Spread the peanut mixture in the parchment-lined baking dish. Make sure the mixture is about 5/8” thick. Using a spoon (you can grease it with butter or avocado oil to prevent sticking), press the nuts densely together so the bars don’t fall apart when you cut them.

Bake the honey-peanut mixture in the middle of the oven at 350° F/180° C for 15 minutes. Remove the baking dish from the oven and let it cool completely. By holding the parchment paper, carefully move the peanut bar block onto a cutting board. Cut the block into bar shapes about 1”x 3” in size with a large, sharp knife.

Store in an airtight container in a cool and dry place.
