CREAMY HOMEMADE CHOCOLATE SAUCE

Chocolate was always one of my favorite treats and one of the hardest to give up when I made the change to the Specific Carbohydrate Diet described in Elaine Gottschall’s book Breaking the Vicious Cycle. Initially, I switched to this diet to address multiple severe intestinal infections that highly qualified physicians had failed to get under control with the help of modern medicine. Through the Internet, I found a naturopath that advised me to try this diet for four weeks. Coming from a family of physicians and dentists, addressing illnesses with a natural diet was something completely new to me and I was extremely skeptical. To this day, I am incredibly grateful to have found and ventured this path. Not only did the diet help my intestinal problems, but it also alleviated many other issues such as severe headaches, chronic fatigue, extremely low weight, allergies, and asthma that were all connected to a weak immune system.
With the help of the Specific Carbohydrate Diet, I stopped feeding the inflammation. Juicing and natural mineral supplements gave my body much-needed nutrients and also assisted the detoxifying process. My immune system strengthened over time and started addressing chronic inflammation. Depending on what the immune system addressed, the specific symptoms first worsened and then disappeared for good. This happened in waves over a couple of years and slowly but surely, my body healed.
I was so proud of myself when I healed sufficiently to finally reintroduce cocoa and 100% chocolate successfully into my diet and was able to tolerate it without any problems.

To this day, I enjoy chocolate only occasionally, simply because my body is asking for mostly fresh raw fruit and vegetables, some meat, eggs, and of course my homemade yoghurt. I follow those food choices most of the time and get rewarded with maximum energy, great sleep, and high performance level when it comes to exercises. Only occasionally do I enjoy a sweet treat or alcoholic drink simply because I want to join in with family and friends. This homemade chocolate sauce is one of those treats. It’s made without refined sugar, food additives, or lactose and it’s simply a delight. It’s easy to make and gives you endless options to use it for. You can drizzle it over cake, pancakes, fresh fruit, dessert, ice cream, or stir it into your favorite nut milk for a hot chocolate.

 

MAKES 1 1/2 CUPS
INGREDIENTS

5.4 oz organic coconut cream (I use Native Forest Organic Coconut Cream Premium)
1/3 cup chocolate chips (I use Pascha Organic Dark Chocolate Baking Chips 100% Cacao)
1/4 cup honey
1/2 tsp vanilla extract

INSTRUCTIONS
In a double boiler, melt the chocolate chips, then add the honey, vanilla extract, and coconut cream. Stir until smooth. Store in a sealable container and keep refrigerated. Serve hot or cold.
